‍Nicolas Chouchanian, Head Chef – a calling born at the Mas.
For Nicolas Chouchanian, cooking was never a late choice. It was obvious from the start. He grew up at Le Mas de Fauchon. As a child, he watched the bustle of service and the precise gestures of the chefs who came one after another.
From an early age he soaked up this atmosphere of high standards, passion and generosity. Still very young, he decided to make it his career and went away to train. Then came the time to return to what matters most: the family business. A period of transition, the desire to build, and the clear choice to come back to where it all began.

The Chef's cuisine
This is lively, local cuisine, prepared with precision but never set in stone. Nicolas likes to compose his menus day by day, following his inspiration, the season and the produce. Nothing is fixed. Nature sets the pace.
The estate's kitchen garden feeds this daily inspiration. He particularly enjoys working with fine cuts — dry-aged meats, whole fish — which he showcases with respect and precision.
